Easy Breakfast Egg Bake

This is my favorite easy meal prep! I make it almost every Sunday and it has made my mornings so much easier.


Ingredients:

  1. Tomatoes - I use constellation tomatoes for the variety

  2. One bunch of spinach or your greens of choices

  3. 12 eggs

  4. 5 fresh basil leaves


Steps

  1. Preheat oven to 425

  2. Chop tomatoes, spinach, and basil

  3. In bowl crack eggs and whisk to combine yolk and whites

  4. Pour vegetable mix into eggs

  5. Add a sprinkle of salt and pepper and mix

  6. Coat dish with cooking spray and pour mix in

  7. Cook for 30-40 minutes depending on dish

  8. Enjoy!
