Papaya: My BFF

When I first had to go on the elimination diet and cut out all fruits with FODMAPs I was no longer able to eat some of my all time favorite fruits. This included apples, peaches, nectarines, and watermelon. About 2.5 years later I picked up a Papaya, did some research, and found out that it is Low FODMAP. Not only has it been a constant snack in my fridge ever since, but I also discovered my favorite snack. Trader Joe's Chile Lime Seasoning on top of Papaya! One bite and you are swept off your feet and taken to a chair on the beach of your favorite island.
